DIPS/SPREADS:

Hot Artichoke Dip: Artichoke hearts, cheese, mayonnaise and secret spices. Served with assorted crackers. Serves 20 people

Chile Con Queso: Choice of with or without meat. Served with corn tortilla chips. Serves 25-35 people

Queso Verde: Tomatillo sauce and Chihuahua cheese served with corn tortilla chips. Serves 25-35 people

VEGETABLES/ CHEESE SELECTIONS:

Stuffed Jalapeños: Pickled jalapeños stuffed with cheddar cheese and lightly fried. Serves 25 people

Blue Cheese Soufflé Stuffed Mushrooms Caps: Served with a red grape garnish. Serves 20 people

Say Cheese: Mini pastry wrapped Brie filled with thinly sliced Roma tomatoes, prosciutto and basil. Freshly baked ricotta cheese with fennel seed crust. Warm sliced mozzarella, sun dried tomatoes, and garlic with extra virgin olive oil. All served with crusty French bread. Serves 35 people

Brie en Croute: Pastry wrapped Brie cheese and pesto, topped with pine nuts and baked. Served with sliced baguettes. Serves 30 people

Cheese and Shallot Stuffed Mushrooms: Mushroom caps stuffed with cheese, shallots, and parsley. Baked until hot and bubbly. Serves 15 people

Spinach and Mushroom Quesadillas: Tortillas stuffed with fresh spinach, mushrooms and Monterey Jack cheese. Served with a side of sour cream and salsa. Serves 25 people

Cheese Tortellini: Cheese stuffed tortellini pasta in a basil cream sauce. Serves 30 people

Asparagus Prosiutto Phyllo Bites (50 pieces)

Spinach and Feta Cheese Pinwheels or Wild Mushroom Pinwheels - Serves 30 people (60 pieces)

Bacon, Tomato and Cheddar Mini Quiche: Mini quiche shells filled with bacon, tomato concasse, and cheddar cheese. Serves 15 people

Spinach and Feta Cheese Mini Quiche: Mini quiche shells filled with fresh spinach and feta cheese. Serves 15 people

Porcini Mushroom Tartlets: Porcini and domestic mushrooms sautéed with fresh herbs, served in puff pastry. Serves 25 people

Sun Dried Tomato and Goat Cheese Puffs: Pastry filled with sun dried tomatoes, goat cheese and special seasonings. Serves 15 people

Shrimp Brochette: Fresh shrimp and jalapeño slice wrapped in bacon and baked. Served with mango- chipotle dipping sauce. Serves 20 people

Mustard and Garlic Grilled Shrimp: Fresh shrimp in a mustard garlic marinade grilled to perfection. Served with drawn butter. Serves 15 people

Mini Crab Cakes: Served with a spicy Remoulade. Serves 25 people

Crab Puffs: Lump crabmeat, scallions, and cheese baked until bubbly on English toast. Serves 25 people

Grandma Buck’s Sharp Cheddar Puffs: Cheddar cheese, sausage and hot red pepper baked into a light puff. Serves 25 people

Bacon Wrapped Jalapeños: Fresh jalapeños stuffed with cream cheese, wrapped in bacon and broiled till bubbly. Serves 25 people

Southwestern Egg Rolls: Chicken, black beans, corn, a blend of peppers and onions, and a touch of cilantro. Serves 25 people

Sesame Chicken Tenders: Breaded chicken tenders lightly fried and coated with sesame seeds, served with whole grain honey mustard. Serves 35 people

Chicken and Jalapeño Jack Cheese Quesadillas: Fresh tortillas stuffed with grilled chicken and jalapeño Jack cheese. Served with a side of sour cream and salsa. Serves 25 people

Traditional Chinese Spring Rolls: Ground pork, fresh ginger, mushrooms, bean sprouts, water chestnuts, bamboo shoots and seasonings wrapped in egg roll wrapper and lightly fried. Served with soy sauce and hot sauce. Serves 25 people

Chicken Wings in Oyster Sauce: Chicken wings sautéed with fresh ginger root, and glazed in rich oyster sauce. Serves 25 people

Buffalo Wings: Wings tossed in a spicy buffalo sauce, served with either blue cheese or ranch dressing. Serves 25 people

Honey BBQ Glazed Chicken Wings: Serves 25 people

Sliced Beef Tenderloin: Served with creamy horseradish and small dinner rolls. Serves 40 people

Stuffed Pork Loin: Pork loin stuffed with feta cheese, spinach, and portabella mushrooms and sliced. Serves 35 people

Mini Hot Ham and Swiss Sandwiches: Accented with poppy seed butter, wrapped in foil and baked. Serves 25 people
